Ashley’s Salad

One of my dearest and oldest friends, Ashley Smith, happens to have an arsenal of salad recipe’s beyond compare.  Whenever she comes over for supper, I always ask her to bring one of her fabulous salads.  This one, which I have named “Ashley’s Salad”, has become one of my all time favorites to serve as a side to a light or vegetarian main dish.  It is always a hit, even with the pickiest eaters.  The sweet, light dressing is the perfect accent to the crunchy almonds, creamy swiss cheese, salty bacon, spicy onion and the crispy lettuce.  This salad has also been tagged – “Bacon Salad”!  Try serving this at your next dinner party, family gathering or casual night in.  It is sure to be a keeper.  Enjoy!

Ashley's Salad
Recipe type: Salad
Serves: 8
  • Salad ingredients:
  • 1 Head of Romaine lettuce torn
  • ¾ Cup Shredded Swiss cheese
  • ½ Cup Crumbled Bacon, about 4 slices
  • ½ Cup Green onions, 1 bunch
  • ½ Cup Sliced almonds
  • Dressing ingredients:
  • 1 cup oil
  • ½ cup sugar
  • ½ tsp. garlic salt
  • ½ tsp. dry mustard
  • ⅓ cup white vinegar
  1. Layer the first four ingredients in a large (cold) salad bowl.
  2. For the dressing mix the dry ingredients together so there are not any lumps. Add the vinegar and slowly drizzle the oil in while whisking. These measurements usually make a little too much dressing, so add dressing to salad accordingly.
  3. Put sliced almonds in frying pan with lots of sugar. Cook on high heat until the sugar carmelizes. Don’t let the almonds get too brown. Let cool and add to the salad.
  4. Dress salad and serve. Enjoy!
